Preparing the Calamari

Clean and Prepare Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels. This will help achieve a crispy texture when frying.

Dredging the Calamari
In a large bowl, mix the gluten-free flour, cornstarch, salt, black pepper, and cayenne pepper. Dredge the calamari rings in the flour mixture, ensuring they are evenly coated.
Frying the Calamari

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the dredged calamari rings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.
Making the Spicy Garlic Sauce

Sauté the Vegetables
In a separate pan, add a tablespoon of oil over medium heat. Sauté the minced garlic, red bell pepper, and green bell pepper for about 3-4 minutes until the peppers soften.

Add scallions, soy sauce, sriracha, honey, and lime juice to the sautéed vegetables. Stir well and cook for an additional 2 minutes until heated through.
Combining and Serving

Toss the Calamari
In a large bowl, combine the crispy calamari with the spicy garlic sauce. Toss well to ensure the calamari is evenly coated with the sauce.
