In a mixing bowl, combine the coconut milk, heavy cream, granulated sugar, vanilla extract, and a pinch of salt. Whisk together until the sugar is completely dissolved and the mixture is well combined.

Cover the mixing bowl with plastic wrap or a lid and refrigerate the mixture for at least 2 hours or until it is thoroughly chilled.

Churn the Ice Cream
Once the mixture is chilled, pour it into an ice cream maker. Churn according to the manufacturer's instructions, usually for about 20-25 minutes, or until it reaches a soft-serve consistency.
