Chicken Skewers

Prepare the Marinade
In a large bowl, combine soy sauce, brown sugar, curry powder, minced garlic, grated ginger, lime juice, vegetable oil, and salt. Mix well.

Marinate the Chicken
Cut the chicken breasts into 1-inch pieces and add them to the marinade. Make sure all pieces are well coated. Cover the bowl and refrigerate for at least 30 minutes (up to 4 hours for more flavor).

Prepare Skewers
Soak wooden skewers in water for 30 minutes to prevent burning. Thread the marinated chicken pieces onto the skewers.

Mix Sauce Ingredients
In a medium bowl, whisk together the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, chili paste, and water until smooth and creamy.

Adjust Consistency
If the sauce is too thick, add more water, a tablespoon at a time, until the desired consistency is reached.
