Prepare the ingredients
Thinly slice the beef and chop the green cabbage into bite-sized pieces. Clean and slice the mushrooms, and chop the scallions, keeping the green and white parts separate.

Cook the udon noodles
Boil a pot of water and cook the udon noodles according to package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

Stir-fry the beef
In a large pan or wok, heat a tablespoon of sesame oil over medium-high heat. Add the sliced beef and stir-fry for about 3-4 minutes until browned. Remove the beef from the pan and set aside.

Add the vegetables
In the same pan, add a little more sesame oil if necessary. Stir in the minced garlic and ginger, and sauté for about 30 seconds until fragrant. Add the green cabbage, mushrooms, and the white parts of the scallions. Stir-fry for about 3-5 minutes until the vegetables are tender.

Garnish and serve
Serve the Bulgogi Yaki Udon hot, garnished with the green parts of the scallions and a sprinkle of sesame seeds on top.
