Method

Prepare the Broth

    Roast Beef Bones

    Preheat your oven to 200°C (400°F). Place the beef bones on a roasting pan and roast for 30-40 minutes until they are browned.

    Prepare Aromatics

    While the bones roast, cut the yellow onion in half and slice the ginger in thick slices. You can slightly char them over an open flame or on a hot skillet to enhance their flavors.

    Simmer the Broth

    In a large pot, add the roasted bones, water, charred onion, ginger, star anise, cinnamon stick, and cloves. Bring to a boil, then reduce the heat to low and let it simmer for at least 4 hours. Skim off any foam that rises to the surface.

    Season the Broth

    After simmering, add fish sauce and salt to the broth. Taste and adjust seasoning as necessary. Strain the broth through a fine sieve or cheesecloth to remove solids.

Prepare Noodles and Garnish

    Cook Rice Noodles

    In a separate pot, bring water to a boil. Add the rice noodles and cook according to package instructions (usually about 5-7 minutes). Drain and rinse with cold water to stop the cooking process.

    Prepare Garnish

    While the noodles are cooking, chop the cilantro, slice the scallions, and prepare the onion, Thai basil, lime wedges, and chili peppers.

Assemble the Pho

    Serve

    In a bowl, place a portion of cooked rice noodles. Ladle the hot broth over the noodles. Garnish with sliced onions, chopped cilantro, scallions, Thai basil, lime wedges, and sliced chili peppers. Enjoy your Buba Pho hot!
