Method

Prepare the Noodles

    Boil the Water

    In a large pot, bring 1 liter of water to a rolling boil.

    Cook the Noodles

    Add 200 grams of rice noodles to the boiling water. Cook according to package instructions, usually around 5-7 minutes, until the noodles are tender but still firm. Drain and rinse under cold water to stop the cooking process.

Make the Buba Sauce

    Mix the Ingredients

    In a bowl, combine 3 tablespoons of peanut butter, 2 tablespoons of soy sauce, 1 tablespoon of honey, 1 teaspoon of sesame oil, 1 tablespoon of lime juice, 2 minced garlic cloves, 1 teaspoon of grated ginger, and 1 teaspoon of red chili flakes.

    Whisk Together

    Whisk the mixture until smooth and well combined. Adjust seasoning to taste.

Prepare the Vegetables

    Chop the Vegetables

    Julienne 1 medium carrot, slice 1 medium bell pepper, and thinly slice 1 medium cucumber. Chop 2 stalks of green onions and 0.5 cup of cilantro.

Assemble the Dish

    Combine Noodles and Sauce

    In a large mixing bowl, combine the cooked noodles with the Buba sauce. Toss until the noodles are well coated.

    Add Vegetables

    Add the prepared vegetables (carrot, bell pepper, cucumber, green onions, and cilantro) to the noodle mixture. Toss gently to combine.

Serve

    Plate the Noodles

    Divide the Buba Noodle mixture onto serving plates.

    Garnish

    Sprinkle 0.5 cup of crushed peanuts on top and serve with lime wedges on the side.
