Prepare the Ingredients

Gather all your ingredients and chop the vegetables into small, even pieces.

Scramble the Eggs

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium heat. Beat the eggs in a bowl and pour them into the skillet. Cook, stirring gently, until the eggs are just set. Remove from the skillet and set aside.

Cook the Vegetables

In the same skillet, add the remaining vegetable oil. Add the diced onion and sauté until translucent. Then add the carrots, Chinese broccoli, and tomatoes. Stir-fry for about 3-4 minutes until they are tender.

Add the Rice

Add the cooked Jasmine rice to the skillet. Pour in the soy sauce, and season with salt and pepper. Stir well to combine, breaking up any clumps of rice.

Combine Everything

Add the scrambled eggs back into the skillet along with the chopped cilantro. Mix everything together thoroughly and cook for an additional 2-3 minutes to heat through.

Serve

Remove from heat and serve hot, garnished with additional cilantro if desired.
