    Cook the wide rice noodles according to package instructions. Drain and set aside.

    Stir-fry the Vegetables

    In a large skillet or wok, heat vegetable oil over medium heat. Add minced garlic and stir-fry for about 30 seconds until fragrant.

    Add Broccoli and Carrots

    Add Chinese broccoli and sliced carrots to the skillet. Stir-fry for 3-4 minutes until vegetables are tender but still crisp.

    Add Noodles and Sauce

    Add the cooked rice noodles to the skillet along with sweet soy sauce and black pepper. Toss everything together to combine and heat through.

    Add Eggs

    Push the noodle mixture to one side of the skillet, crack the eggs into the empty side, and scramble them until cooked. Once cooked, mix the eggs into the noodle mixture.

    Remove the skillet from heat, garnish with cilantro leaves, and serve hot.
