Shrimp Preparation

Prepare the Shrimp
In a medium bowl, combine buttermilk and jumbo shrimp. Let it marinate for 20-30 minutes in the refrigerator.

Mix Dry Ingredients
In another bowl, mix together the all-purpose flour, cornmeal, cayenne pepper, garlic powder, salt, and black pepper.

Dredge Shrimp
Remove shrimp from the buttermilk, allowing excess to drip off, then dredge them in the flour mixture, ensuring they are evenly coated.

Heat Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Shrimp
Carefully add the coated shrimp to the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.

Prepare the Bread
If using French bread, slice it lengthwise and toast it lightly until golden. If using pre-made garlic bread, heat it according to package instructions.

Assemble the Po Boy
On the bottom half of the bread, layer the fried shrimp, followed by shredded lettuce, sliced tomato, and sliced red onion.

Finish with Sauce
Drizzle tartar sauce generously over the top and squeeze fresh lemon juice over the entire sandwich.

Close the sandwich with the top half of the bread, slice in half if desired, and serve immediately with extra lemon wedges.
