Rinse Quinoa
Rinse the quinoa under cold water in a fine-mesh sieve to remove any bitterness.

Chop Vegetables
Dice the red bell pepper and onion, and mince the garlic cloves.

Prepare Avocado
Slice the avocado and set aside for topping.

Chop Cilantro
Chop the cilantro and set aside for topping.

Cook Quinoa
In a saucepan, combine rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat and cover. Simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.

Sauté Vegetables
In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 3-4 minutes. Add garlic and sauté for another minute.

Add Bell Pepper and Corn
Stir in the diced red bell pepper and corn kernels, cooking for 5 minutes until softened.

Mix in Spinach and Spices
Add spinach, cumin, smoked paprika, salt, and black pepper to the skillet. Cook until spinach is wilted, about 2-3 minutes.

Serve the quinoa and black bean mixture in bowls, topped with sliced avocado, chopped cilantro, and lime wedges.
