Preparation of Creamed Spinach
1. Cook the Spinach
In a large pot, melt 4 tablespoons of butter over medium heat. Add 4 cups of fresh spinach and sauté until wilted, about 3-4 minutes.
3. Make the Creamed Spinach
Pour in 1 cup of heavy cream and stir well. Add 1 cup of grated Parmesan cheese, 1 teaspoon of salt, and 1 teaspoon of black pepper. Cook until the mixture thickens, about 3-5 minutes. Remove from heat.
Assemble the Lobster Rockefeller
4. Preheat Oven
Preheat your oven to 375°F (190°C).
5. Combine Ingredients
In a mixing bowl, combine the cooked creamed spinach with 1 cup of fresh lobster meat. Stir until well combined.
6. Stuff the Oysters
Place the shucked oysters on a baking tray. Spoon the lobster and spinach mixture generously over each oyster.
Prepare Breadcrumb Topping
7. Make Breadcrumb Mixture
In a small bowl, mix together 1 cup of bread crumbs, 2 tablespoons of melted butter, and 2 tablespoons of chopped fresh parsley.
8. Top the Oysters
Sprinkle the breadcrumb mixture evenly over the stuffed oysters.
Bake the Oysters

Place the baking tray in the preheated oven and bake for 15-20 minutes, or until the topping is golden brown and the oysters are cooked through.
