    Prepare Quinoa

    Rinse 1 cup of quinoa under cold water in a fine mesh strainer. In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid has been absorbed.

    Chop Vegetables

    While the quinoa is cooking, chop the red bell pepper, zucchini, and red onion into small, even pieces. Mince the garlic cloves.

    Sauté Vegetables

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped red onion and sauté for about 2 minutes until it starts to soften. Add the minced garlic and cook for another minute until fragrant.

    Add Remaining Vegetables

    Add the chopped red bell pepper and zucchini to the skillet. Sprinkle with 1 teaspoon of cumin, 1 teaspoon of paprika, and season with salt and black pepper to taste. Cook for approximately 5-7 minutes, stirring occasionally, until the vegetables are tender.

Combine and Serve

    Combine Quinoa and Vegetables

    Once the quinoa is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Stir well to combine and adjust seasoning if necessary.
