Chocolate Mousse

    Melt the Chocolate

    In a heatproof bowl, combine the dark chocolate and a pinch of salt. Melt the chocolate over a pot of simmering water (double boiler) or in the microwave in 30-second intervals, stirring between each, until smooth. Allow it to cool slightly.

    Prepare the Egg Mixture

    In a separate bowl, separate the egg whites from the yolks. Whisk the egg yolks with granulated sugar until pale and thick. Stir in the melted chocolate and vanilla extract until fully combined.

    Whip Egg Whites

    In a clean bowl, beat the egg whites using an electric mixer until soft peaks form. Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Whip the Cream

    In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated.

    Chill the Mousse

    Spoon the mousse into serving dishes or glasses, cover with plastic wrap, and refrigerate for at least 2 hours or until set.

    Prepare the Whipped Cream

    In a chilled bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip using an electric mixer until soft peaks form.

    Top the Mousse

    Once the mousse has set, remove it from the refrigerator. Spoon or pipe the whipped cream over the chocolate mousse before serving.
