Method

Prepare the Mussels

    Clean the Mussels

    Rinse the fresh mussels under cold water, scrubbing the shells to remove any dirt or debris. Discard any mussels that are open and do not close when tapped.

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add minced garlic and finely chopped shallots. Sauté until fragrant, about 2 minutes.

Choose Your Sauce

    Coconut Cayenne Sauce

    Add coconut milk, cayenne pepper, and lime juice to the pot with the sautéed aromatics. Stir to combine. Add the cleaned mussels, cover the pot, and cook for 5-7 minutes until the mussels open.

    White Wine Garlic Sauce

    Add white wine and butter to the pot with the sautéed aromatics. Stir to melt the butter. Add the cleaned mussels, cover the pot, and cook for 5-7 minutes until the mussels open.

Prepare the Garlic Bread

    Make Garlic Butter

    In a small bowl, mix together softened butter, garlic powder, and chopped parsley.

    Prepare the Baguette

    Slice the baguette in half lengthwise and spread the garlic butter mixture evenly on both halves.

    Toast the Bread

    Preheat your oven to 375°F (190°C). Place the baguette halves on a baking sheet and toast in the oven for 10-12 minutes or until golden brown.

Serve

    Plate the Mussels

    Once the mussels are cooked and opened, sprinkle with fresh parsley and season with salt and black pepper. Serve them in a big bowl.

    Serve with Garlic Bread

    Serve the sautéed mussels hot alongside the toasted garlic bread for dipping.
