Shuck the Oysters
Carefully shuck the fresh oysters, retaining the liquid in the shell. Place the shucked oysters on a baking sheet, half shell up.

Sauté Spinach
In a large skillet, melt the unsalted butter over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add the fresh spinach and cook until wilted.

Stir in the heavy cream, salt, black pepper, and nutmeg. Cook for an additional 2-3 minutes until the mixture thickens slightly. Remove from heat and stir in the grated Parmesan cheese until melted and combined.

In a small bowl, combine the crumbled bacon, grated Parmesan cheese, breadcrumbs, and olive oil. Mix until well combined.
