Prepare the Oysters

Clean the Oysters
Rinse the fresh oysters under cold running water to remove any sand or debris. Pat them dry with a clean towel.

Prepare the Breading
In a shallow bowl, combine all-purpose flour, cornmeal, cayenne pepper, salt, and black pepper. Mix well.

Coat the Oysters
Dip each oyster into the buttermilk, allowing any excess to drip off, then dredge them in the flour mixture until fully coated.
Fry the Oysters

Heat the Oil
In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Oysters
Carefully add the breaded oysters to the hot oil in batches, making sure not to overcrowd the pan. Fry for 2-3 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
Prepare the Sandwich

Toast the Bread
Slice the French bread lengthwise and lightly toast it on a skillet or in a toaster.

Prepare the Vegetables
Wash and dry the lettuce, slice the tomato, and thinly slice the red onion. Mince the garlic cloves.

Assemble the Po Boy
Spread a generous amount of tartar sauce on the cut sides of the toasted bread. Layer with lettuce, fried oysters, sliced tomato, and red onion. Top with additional tartar sauce if desired.

Garnish and Serve
Serve the Oyster Po Boy with lemon wedges on the side for squeezing over the sandwich. Enjoy immediately while hot and crispy.
