Prepare the Lobster
Bring a large pot of salted water to a boil. Add the whole lobster and cook for about 8-10 minutes until bright red. Remove the lobster and let it cool. Reserve the cooking water.

Extract Lobster Meat
When the lobster is cool enough to handle, remove the meat from the claws and tail. Chop the lobster meat into small pieces and set aside. Save the shells for the bisque.

Add Tomato Paste and Stock
Stir in the tomato paste and cook for 2 minutes. Add the dry white wine, fish stock, lobster shells, thyme, bay leaf, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.

Add Cream and Lobster Meat
Stir in the heavy cream and chopped lobster meat. Heat gently over low heat until warmed through but do not boil.
