Method

Preparing the Grilled Salmon

    Prepare the Marinade

    In a small bowl, mix olive oil, garlic powder, salt, black pepper, and lemon juice. This will be used to marinate the salmon.

    Marinate the Salmon

    Place salmon fillets in a shallow dish and pour the marinade over the fillets. Cover and refrigerate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat (around 375°F to 400°F).

    Grill the Salmon

    Remove the salmon from the marinade and place it skin-side down on the grill. Cook for about 6-8 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

Preparing the Seasonal Vegetables

    Chop the Vegetables

    Slice the zucchini, bell pepper, and carrots into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the chopped vegetables, salt, and pepper. Sauté for about 5-7 minutes, or until the vegetables are tender but still crisp.

    In a small saucepan over low heat, melt the butter carefully to avoid burning.

    Once the butter is melted, add lemon juice, minced garlic, chopped parsley, salt, and black pepper. Stir well and let it simmer for 2-3 minutes.
