Method
Calamari Preparation

Prepare the Calamari
In a large bowl, combine the buttermilk, salt, pepper, and garlic powder. Add the sliced calamari and let it marinate for at least 30 minutes.

Prepare the Coating
In a separate bowl, mix together the all-purpose flour and cornstarch. This will be the dry coating for the calamari.

Coat the Calamari
Remove the calamari from the buttermilk mixture, allowing excess to drip off. Dredge the calamari in the flour-cornstarch mixture, ensuring each piece is well-coated.

Fry the Calamari
Carefully lower the coated calamari into the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasoning
Stir in the crushed tomatoes, red pepper flakes, dried oregano, and salt. Bring to a simmer and cook for 15-20 minutes, stirring occasionally.

Remove from heat and stir in chopped fresh basil before serving.
Balsamic Reduction (optional)

Make the Balsamic Reduction
In a small saucepan, combine balsamic vinegar and honey. Bring to a gentle simmer over medium heat. Cook until the mixture reduces by half and thickens slightly, about 10-15 minutes.

Plate the fried calamari and serve with the spicy marinara sauce or drizzle with balsamic reduction and top with sliced cherry peppers.
