Prepare the Filet Mignon Tips
Season the filet mignon tips with salt and black pepper.

Sear the Filet Tips
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the seasoned filet tips to the skillet and sear for about 3-4 minutes on each side until browned and cooked to your desired doneness. Remove from skillet and set aside.
White Truffle Gorgonzola Sauce

Add Cream and Cheese
Pour in 1 cup of heavy cream, stirring constantly. Add 4 ounces of crumbled Gorgonzola cheese and 1 tablespoon of white truffle oil. Stir until the cheese is melted and the sauce is smooth. Simmer for about 2-3 minutes until thickened.
Garlic Spinach

Sauté the Spinach
In a separate pan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 30 seconds.

Cook the Spinach
Add 8 cups of fresh spinach to the pan, sprinkling with salt and black pepper. Cook until wilted, about 2-3 minutes.
