Filet Mignon

Prepare the Steak
Take the filet mignon out of the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This helps it cook evenly.

Pat the filet mignon dry with paper towels. Season both sides generously with salt and black pepper.

Rest the Steak
Remove the filet mignon from the skillet and let it rest for 5 minutes before slicing.

Sauté Garlic
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Add the fresh spinach to the skillet. Cook, stirring occasionally, until the spinach is wilted, about 2-3 minutes. Season with salt.
