Thinly slice the filet mignon against the grain to ensure tenderness. Aim for slices about 1/8 inch thick.

Add the sliced filet mignon to the skillet with the vegetables. Cook for an additional 3-4 minutes, stirring frequently, until the meat is just cooked through and no longer pink.

Reduce the heat to low, then layer the cheddar cheese over the cooked meat and vegetables. Cover the skillet with a lid for about 2 minutes to allow the cheese to melt.
