    Prepare the Clams

    Preheat your oven to 375°F (190°C). Clean the clams under cold running water to remove any sand or debris. Discard any clams that are open and do not close when tapped.

    Cook the Bacon

    In a skillet, cook the bacon over medium heat until crispy. Remove the bacon and place it on paper towels to drain. Once cool, crumble the bacon into small pieces.

    Make the Casino Butter

    In the same skillet with the bacon fat, add 4 tablespoons of butter and 3 minced garlic cloves. Sauté over low heat until the garlic is fragrant, about 1 minute. Add the crumbled bacon, bread crumbs, and parmesan cheese. Mix well and season with black pepper and salt to taste.

    Fill the Clams

    Place the cleaned clams in a baking dish. Spoon the casino butter mixture evenly over each clam.

    Bake the Clams

    Bake the clams in the preheated oven for about 10-12 minutes or until the topping is golden brown and the clams are cooked through.

    Garnish

    Remove from the oven and sprinkle with chopped parsley before serving.

Garlic Spinach

    Sauté the Garlic

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 2 minced garlic cloves and sauté until fragrant, about 30 seconds.

    Cook the Spinach

    Add 4 cups of fresh spinach to the skillet. Sauté until the spinach is wilted, about 2-3 minutes. Season with salt to taste.

    Serve

    Remove from heat and serve the garlic spinach alongside the baked clams casino.
