Chicken Fried Steak

    Prepare the Steak

    Pound the filet mignon to about 1/4 inch thickness using a meat mallet. Season both sides with salt and black pepper.

    Set Up Breading Station

    In one shallow bowl, place the all-purpose flour. In a second bowl, whisk together the eggs and milk. Set up a third bowl for additional flour.

    Bread the Steak

    Dredge each piece of steak in the flour, dip into the egg mixture, and then coat again with flour. Ensure it’s well coated.

    Fry the Steak

    Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the breaded steak. Fry for about 3-4 minutes on each side until golden brown. Remove and keep warm.

    Make the Gravy

    In the same skillet, reduce heat to medium and add butter. Once melted, whisk in additional flour, stirring constantly until browned. Gradually add 1 cup of milk, whisking until smooth and thickened. Season with salt and pepper.

    Serve

    Serve the fried steak topped with the white gravy.

Mashed Potatoes

    Boil the Potatoes

    Peel and cut the potatoes into quarters. Place them in a large pot of salted water and bring to a boil. Cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Garlic Spinach

    Sauté the Garlic

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Cook the Spinach

    Add the fresh spinach to the skillet. Sauté until wilted, about 3-4 minutes. Season with salt and black pepper.
