Chicken Preparation
- 1
Marinate the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, garlic powder, and onion powder. Add the chicken breasts to the mixture, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.
Breading
- 2
Prepare the Breading Station
In a separate bowl, mix together the all-purpose flour, cornstarch, paprika, baking powder, additional salt, and additional black pepper. Whisk until well combined to create a dry breading mixture.
Frying
- 3
Heat the Oil
In a large skillet or deep fryer, pour in the vegetable oil and heat over medium-high heat until it reaches 350°F (175°C).
- 4
Bread the Chicken
Remove the marinated chicken breasts from the buttermilk, allowing excess liquid to drip off. Dredge each piece in the breading mixture, pressing gently to ensure an even coating.
- 5
Fry the Chicken
Carefully place the breaded chicken breasts into the hot oil, making sure not to overcrowd the pan. Fry for about 6-8 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F/74°C).
- 6
Drain and Serve
Once cooked, remove the chicken from the oil and place it on a wire rack or paper towels to drain excess oil. Serve hot with your favorite sides.
