Rinse the chicken cutlets under cold water and pat them dry with paper towels.

Season both sides of the chicken cutlets with olive oil, salt, and black pepper.

Sear the Chicken
In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the chicken cutlets and cook for about 5-7 minutes on each side, until they are golden brown and cooked through. Remove from the skillet and set aside.

Slice the fresh tomatoes and mozzarella cheese. Layer the tomato slices over each chicken cutlet, followed by a slice of mozzarella cheese.

Transfer the topped chicken cutlets to a baking dish and place in the preheated oven. Bake for about 10-15 minutes until the cheese is melted and bubbly.
