Prepare Tortillas

Fry the Tortillas
In a large frying pan, heat vegetable oil over medium heat. Once hot, add the corn tortillas one by one and fry until they are golden brown and crispy, about 2-3 minutes per side. Remove from the pan and drain on paper towels.
Assemble Nachos

Layer the Ingredients
On a large oven-safe platter or a baking sheet, arrange the fried corn tortillas in a single layer. Sprinkle the pepper jack cheese and cheddar cheese evenly over the tortillas.

Add Toppings
Evenly distribute the chopped tomatoes, scallions, and jalapenos on top of the cheese-covered tortillas.
Bake Nachos

Melt the Cheese
Preheat the oven to 350°F (175°C). Place the assembled nachos in the oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.

Garnish and Enjoy
Remove the nachos from the oven and let them cool slightly. Serve hot with sour cream and salsa on the side.
