Preparation of Mushroom Duxelles

Sauté Mushrooms
In a large skillet, melt butter over medium heat. Add finely chopped shallots and cook until translucent, about 3-4 minutes.

Beef Fillet Preparation

Sear the Beef
Season the beef fillet with salt and pepper. Heat a skillet over high heat and add a little oil. Sear the beef on all sides until browned, about 2-3 minutes per side. Remove from heat and let it cool slightly.

Brush with Mustard
Once cooled, brush the beef fillet with Dijon mustard all over for added flavor.
Assembly and Baking

Wrap the Beef
Lay out prosciutto slices on a sheet of plastic wrap, slightly overlapping. Spread the cooled mushroom duxelles evenly over the prosciutto. Place the beef on top and roll tightly using the plastic wrap. Chill in the refrigerator for 15 minutes.

Prepare Pastry
Roll out the puff pastry on a floured surface to a rectangle large enough to envelop the beef. Remove the beef from the plastic wrap and place it in the center of the pastry.

Bake
Preheat the oven to 200°C (400°F). Place the wrapped beef on a baking tray and bake for 25-30 minutes, or until the pastry is golden brown and the beef reaches your desired doneness.
