For the Avocado Frites

    Prepare the Avocados

    Cut the ripe avocados in half, remove the pit, and scoop the flesh out. Cut each half into strips.

    Set Up Breading Station

    In three separate bowls, place the all-purpose flour, beaten eggs, and a mixture of panko breadcrumbs, grated Parmesan cheese, salt, and black pepper.

    Bread the Avocado Strips

    Dip each avocado strip first into the flour, then the beaten eggs, and finally coat them with the panko and Parmesan mixture. Press lightly to adhere.

    Heat the Oil

    In a large frying pan, heat the olive oil over medium heat until it reaches 350°F (175°C).

    Fry the Avocado Frites

    Carefully place the breaded avocado strips into the hot oil in batches, frying until golden brown and crispy, about 2-3 minutes per side. Drain on paper towels.

For the Garlic Citrus Aioli

    Combine Ingredients

    In a mixing bowl, combine mayonnaise, minced garlic cloves, lemon juice, lime juice, salt, and black pepper.

    Whisk the ingredients together until smooth and well combined. Adjust seasoning to taste.

    Cover and refrigerate the aioli for at least 30 minutes before serving to allow flavors to meld.
