Prepare the Dough
In a large bowl, combine warm water (110°F), sugar, and yeast. Let it sit for about 5-10 minutes until frothy. Add the flour and salt to the yeast mixture, and mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area for about 1 hour or until doubled in size.

Shape the Pretzels
Preheat the oven to 450°F (230°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope (about 12-14 inches long) and shape it into a pretzel or stick.

Boil the Pretzels
In a large pot, bring 10 cups of water to a boil and stir in the baking soda. Boil each pretzel for about 30 seconds, then remove with a slotted spoon and place on a parchment-lined baking sheet.
