Prepare the Aioli
In a small bowl, mix together mayonnaise, sweet chili sauce, lime juice, and minced garlic. Set aside.

Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and let drain on paper towels.

Make the Batter
In a mixing bowl, combine all-purpose flour, baking powder, garlic powder, salt, and beer. Whisk until smooth. In another bowl, beat the egg and then add it to the batter.

Batter the Cheese Curds
Dip the cheddar curds into the batter, ensuring they are well coated.

Fry the Cheese Curds
In a deep fryer or large pot, heat oil to 375°F (190°C). Fry the battered cheese curds until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Assemble the Burger
Toast the burger buns. On the bottom half, place the beef patty, top with bacon, and then pile on the fried cheese curds. Spread the sweet chili aioli on the top half of the bun and place it on top.
