Preparation
1. Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin fries, approximately 1/4 inch thick.
2. Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat dry.
3. Fry the Potatoes
In a large pot, heat vegetable oil to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.
4. Toss with Seasoning
In a large mixing bowl, combine garlic powder, cracked black pepper, crushed red pepper flakes, white pepper, paprika, and salt. Toss the hot fries in the bowl until evenly coated with the garlic sauce and seasoning.
5. Serve
