    Prepare Vegetables

    Chop the zucchini, carrot, onion, and mushrooms. Mince the garlic and set aside.

    Cook Vegetables

    In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until translucent. Add zucchini, mushrooms, and carrot; cook until tender. Stir in spinach and season with salt, pepper, and Italian seasoning. Cook until spinach is wilted. Remove from heat.

    Prepare Cheese Mixture

    In a bowl, mix ricotta cheese with salt, pepper, and chopped fresh basil.

    Layer the Lasagna

    Preheat the oven to 375°F (190°C). Spread a layer of marinara sauce at the bottom of a baking dish. Place 3 lasagna noodles on top. Spread half of the ricotta mixture, half of the vegetable mixture, and a third of the mozzarella cheese. Repeat layers and finish with a final layer of noodles, marinara sauce, and the remaining mozzarella and Parmesan cheese.

    Bake

    Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden. Let it cool for 10 minutes before serving.
