Prepare the Chicken

Cut the chicken breast into bite-sized pieces. Marinate with soy sauce, sesame oil, and cornstarch for 15 minutes.

Chop the Vegetables

Dice the bell pepper and zucchini. Chop the green onions and mince the garlic and ginger.

Stir-Fry the Chicken

Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir-fry until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.

Cook the Vegetables

In the same pan, add garlic, ginger, bell pepper, and zucchini. Stir-fry for about 3-4 minutes until the vegetables are tender but still crisp.

Combine and Sauce

Return the chicken to the pan. Add the peanuts, rice vinegar, and chili paste. Stir everything together and cook for another 2-3 minutes until well combined.

Garnish with chopped green onions and serve hot with steamed rice.
