    Prepare the Turkey

    Preheat the oven to 325°F (165°C). Remove the turkey giblets and pat the turkey dry. Rub the olive oil all over the turkey and season generously with salt, black pepper, thyme, rosemary, and sage.

    Make the Stuffing

    In a large skillet, melt the butter over medium heat. Add the diced onion and celery, cooking until softened. In a large bowl, combine the torn croissants, sautéed vegetables, chicken broth, beaten eggs, salt, black pepper, thyme, and sage. Mix well.

    Stuff the Turkey

    Gently stuff the turkey cavity with the croissant stuffing. Secure the opening with kitchen twine.

Cooking

    Roast the Turkey

    Place the stuffed turkey breast-side up in a roasting pan. Roast in the preheated oven for approximately 13-15 minutes per pound, or until the internal temperature reaches 165°F (75°C). Baste occasionally with pan juices.

    Rest and Serve

    Once cooked, remove the turkey from the oven and let it rest for 20-30 minutes before carving. Serve with gravy, cranberry sauce, and steamed green beans.
