Pie Crust Preparation

    Make the Pie Crust

    In a large bowl, mix the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the ice water, a tablespoon at a time, until the dough forms a ball. Wrap in plastic wrap and refrigerate for at least 1 hour.

    Preheat Oven

    Preheat the oven to 425°F (220°C).

    Roll Out the Dough

    On a lightly floured surface, roll out the chilled dough to fit a 9-inch pie pan. Place the dough in the pan and trim the edges. Prick the bottom with a fork.

    Pre-Bake the Crust

    Bake the crust in the preheated oven for about 10 minutes or until lightly golden. Remove from the oven and let cool.

Pumpkin Filling Preparation

    Make the Filling

    In a large bowl, combine the pumpkin puree, sugar, cinnamon, ginger, nutmeg, and salt. Mix well. Add the eggs and evaporated milk, and whisk until smooth.

    Pour the pumpkin filling into the pre-baked pie crust.

    In a medium bowl, beat the heavy cream with an electric mixer until soft peaks form. Gradually add the powdered sugar and vanilla extract, and continue beating until stiff peaks form.
