Preparation of Peking Turkey

    Cook the Turkey

    Preheat the oven to 350°F (175°C). Place the Peking turkey in a roasting pan, season as desired, and roast for 2 to 2.5 hours or until the internal temperature reaches 165°F (74°C). Let it rest before slicing.

    While the turkey is cooking, slice the cucumbers and scallions. Prepare the cranberry-plum sauce and warm the rice pancakes according to package instructions.

    Make Garlic Mashed Potatoes

    Peel and chop the potatoes, then boil in salted water until tender. Drain and mash with butter and minced garlic. Season with salt and pepper to taste.

    In a wok, heat olive oil over medium-high heat. Add string beans and stir-fry for about 5-7 minutes until tender-crisp. Season with salt.
