Preparation of Peking Turkey

1. Cook the Turkey

Preheat the oven to 350°F (175°C). Place the Peking turkey in a roasting pan, season as desired, and roast for 2 to 2.5 hours or until the internal temperature reaches 165°F (74°C). Let it rest before slicing.

While the turkey is cooking, slice the cucumbers and scallions. Prepare the cranberry-plum sauce and warm the rice pancakes according to package instructions.
