    Rub the marinade over the quail, goose, and pheasant, ensuring even coverage. Squeeze the juice of one lemon over the birds and place lemon halves inside each bird. Let them marinate for at least 30 minutes.

    Place the marinated birds on a roasting pan. Dot with butter and roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 165°F (74°C).
