    Soak the Chickpeas

    Place the dried chickpeas in a bowl and cover with water. Let them soak overnight or for at least 8 hours.

    Prepare the Falafel Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarse but well combined.

    Form the Falafel Balls

    Transfer the mixture to a bowl and stir in flour until the mixture holds together. Using your hands, form small balls or patties, about 1-2 inches in diameter.

    Fry the Falafel

    Heat oil in a deep skillet or pot over medium heat. Carefully drop the falafel balls into the hot oil, frying in batches until they are golden brown on all sides, about 4-5 minutes. Remove and drain on paper towels.

    Serve the falafel warm with your choice of toppings such as tahini sauce, chopped vegetables, or pita bread.
