Preparation

    Prepare the Steak

    Remove the dry-aged porterhouse steak from the refrigerator and let it rest at room temperature for 30-60 minutes before cooking.

    Season the Steak

    Generously season both sides of the steak with kosher salt and freshly ground black pepper.

Cooking

    Preheat the Grill or Pan

    Preheat your grill or a large cast-iron skillet over high heat for about 10 minutes.

    Sear the Steak

    Add olive oil to the skillet or grill. Place the steak on the hot surface and sear for 4-5 minutes on each side, or until a crust forms and it reaches your desired doneness.

    Optional Baste

    In the last minute of cooking, add butter and rosemary to the skillet. Baste the steak with the melted butter for added flavor.

Resting and Serving

    Rest the Steak

    Remove the steak from the heat and let it rest for 10 minutes before slicing. This allows the juices to redistribute.

    Slice and Serve

    Slice the steak against the grain and serve immediately, optionally garnished with additional rosemary.
