Marinara Sauce Preparation

    Sauté Vegetables

    In a large saucepan, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Add Garlic

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Combine Tomatoes and Herbs

    Add the canned crushed tomatoes, dried oregano, and dried basil to the saucepan. Stir to combine.

    Season the Sauce

    Season with salt and black pepper to taste. Bring the sauce to a simmer and let it cook for 20-25 minutes, stirring occasionally.

Lasagna Assembly

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Cook Lasagna Noodles

    Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

    Sauté Spinach and Mushrooms

    In a skillet, add a splash of olive oil over medium heat. Add sliced mushrooms and sauté for about 5 minutes until they are browned. Add fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat.

    Mix Cheese Filling

    In a mixing bowl, combine ricotta cheese, half of the Monterey Jack cheese, and a pinch of salt and pepper. Stir well to create a uniform cheese filling.

    Layer the Lasagna

    In a baking dish, spread 1 cup of marinara sauce on the bottom. Place 4 lasagna noodles on top. Spread half of the cheese mixture over the noodles, followed by half of the sautéed spinach and mushrooms. Add another layer of sauce. Repeat the layers once more.

    Top the Lasagna

    For the final layer, place the last 4 lasagna noodles on top. Spread the remaining marinara sauce over them. Sprinkle the top with the remaining Monterey Jack cheese and the grated Parmesan cheese.

    Bake the Lasagna

    Cover the baking dish with foil (to prevent burning) and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, until the cheese is bubbly and golden.

    Cool and Serve

    Let the lasagna cool for about 10 minutes before slicing. Serve warm and enjoy!
