Fried Chicken

Marinate the Chicken
In a large bowl, combine the buttermilk, salt, black pepper, cayenne pepper, paprika, garlic powder, and onion powder. Add the chicken thighs and coat well. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare the Flour Mixture
In a shallow dish, mix together the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

Fry the Chicken
Heat the vegetable oil in a deep skillet or fryer to 350°F (175°C). Dredge the marinated chicken thighs in the flour mixture, shaking off excess flour. Carefully place the chicken in the hot oil and fry for 6-8 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Remove and chop into small pieces.

Make the Jam
Add the bacon, brown sugar, and apple cider vinegar to the skillet. Stir well and let simmer for about 15-20 minutes, until thickened. Set aside.
Hot Honey Glaze

Prepare the Glaze
In a small saucepan over low heat, combine honey and red pepper flakes. Stir until heated through and well combined. Remove from heat.

Serve the sandwiches with kettle chips on the side.
