Sandwich Assembly

Method

Fried Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine the buttermilk, salt, black pepper, cayenne pepper, paprika, garlic powder, and onion powder. Add the chicken thighs and coat well. Cover and refrigerate for at least 2 hours, preferably overnight.

  2. 2

    Prepare the Flour Mixture

In a shallow dish, mix together the flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

  3. 3

    Fry the Chicken

Heat the vegetable oil in a deep skillet or fryer to 350°F (175°C). Dredge the marinated chicken thighs in the flour mixture, shaking off excess flour. Carefully place the chicken in the hot oil and fry for 6-8 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Bacon Jalapeño Jam

  1. 4

    Cook the Bacon

In a skillet over medium heat, cook the bacon until crispy. Remove and chop into small pieces.

  2. 5

    Sauté Vegetables

In the same skillet, add diced jalapeños and chopped onion. Sauté until softened, about 5 minutes.

  3. 6

    Make the Jam

Add the bacon, brown sugar, and apple cider vinegar to the skillet. Stir well and let simmer for about 15-20 minutes, until thickened. Set aside.

Hot Honey Glaze

  1. 7

    Prepare the Glaze

In a small saucepan over low heat, combine honey and red pepper flakes. Stir until heated through and well combined. Remove from heat.

Sandwich Assembly

  1. 8

    Assemble the Sandwich

On the bottom half of a brioche bun, layer a piece of fried chicken, a slice of Monterey Jack cheese, a spoonful of bacon jalapeño jam, and a drizzle of hot honey glaze. Top with lettuce and pickles, then place the top half of the bun on.

  2. 9

    Serve

Serve the sandwiches with kettle chips on the side.
