Shrimp

Prepare the Shrimp
In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

Cook the Shrimp
Add the large shrimp to the skillet. Season with paprika, salt, and black pepper. Cook for 3-5 minutes until the shrimp turn pink and are cooked through. Remove from heat and set aside.
Red Eye Gravy

Cook the Bacon
In the same skillet, add chopped bacon and cook until crispy. Remove bacon and drain excess fat, leaving about 1 tablespoon in the skillet.

Make the Gravy
Add brewed coffee and chicken broth to the skillet. Stir in Worcestershire sauce, scraping the bottom of the pan to incorporate the bacon drippings. Simmer for about 5 minutes until slightly thickened.
Cheese Grits

Add Cheese and Butter
Stir in shredded cheddar cheese and butter until melted and well combined. Remove from heat.
Assembly

Plate the Dish
In serving bowls, add a generous scoop of cheese grits. Top with the cooked shrimp and pour the red eye gravy over the top. Garnish with chopped green onions.
