Marinate the Beef
Place the beef tenderloin in a large resealable bag or shallow dish. Pour the marinade over the beef, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for best results.
Cooking
- 3
Preheat the Grill
Preheat your grill to medium-high heat.
- 4
Cook the Beef
Remove the beef from the marinade and discard the marinade. Grill the beef tenderloin for about 5-7 minutes per side, or until it reaches your desired level of doneness (130°F for medium-rare, 140°F for medium).
- 5
Rest the Beef
Once cooked, remove the beef from the grill and let it rest for 10 minutes before slicing.
Serving
- 6
Prepare the Berry Sauce
While the beef is resting, in a small saucepan over medium heat, combine the mixed berries and cook for about 5 minutes until they start to break down. Stir occasionally. You may add a splash of water or honey to sweeten if necessary.
- 7
Plate the Dish
Slice the rested beef tenderloin and arrange it on a serving platter. Spoon the berry sauce over the beef, and garnish with fresh mint leaves and lemon zest.
