Cooking the Pasta

    Boil the water

    In a large pot, bring water to a boil and add 1 tsp of salt.

    Cook the linguini

    Add the linguini to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

Preparing the Thai Chili Cream Sauce

    Combine ingredients

    In a medium saucepan over medium heat, combine the heavy cream, Thai chili paste, minced garlic, soy sauce, lime juice, and sugar.

    Simmer the sauce

    Stir the mixture and bring to a gentle simmer. Allow it to cook for about 5-7 minutes, stirring occasionally, until it thickens slightly.

Grilling the Chicken

    Prepare the chicken

    Rub the chicken breasts with blackening seasoning evenly on both sides.

    Heat olive oil in a grill pan over medium-high heat. Cook the chicken breasts for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.

    In a large mixing bowl, combine the cooked linguini with the Thai chili cream sauce, tossing well to ensure the pasta is coated.
