    Cook the Linguine

    In a large pot, bring salted water to a boil. Add the linguine pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

    Make the Sauce

    In a medium saucepan over medium heat, combine coconut milk, Thai red curry paste, honey, lime juice, minced garlic, grated ginger, and salt. Whisk until smooth and bring to a simmer. Reduce heat to low and let it cook for about 5-7 minutes, stirring occasionally until slightly thickened. Remove from heat.

Grilled Blackened Chicken

    Prepare the Chicken

    Preheat a grill or grill pan over medium-high heat. Rub chicken breasts with olive oil and coat them evenly with blackening seasoning. Grill the chicken for about 6-7 minutes per side or until fully cooked and internal temperature reaches 165°F (75°C). Remove from grill and let rest for a few minutes before slicing.

    Combine and Serve

    In a large mixing bowl, combine the cooked linguine and Thai chili cream sauce. Toss to coat the pasta evenly. Serve the pasta on plates, topped with sliced grilled chicken, garnished with grated Parmesan cheese and chopped cilantro.
