Prepare the Rice
Rinse the gourmet rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Remove from heat and let it sit covered for an additional 5 minutes.

Chop the Vegetables
While the rice is cooking, slice the bell peppers into thin strips and chop the onion into small pieces. Mince the garlic cloves.

Stir-Fry the Vegetables
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the chopped onion and minced garlic, and sauté for 1-2 minutes until fragrant. Add the sliced bell peppers and continue to stir-fry for another 3-4 minutes until they are tender yet crisp.

Add the Sauce
Pour in the Thai chili sauce and soy sauce into the skillet. Stir well to coat the vegetables evenly. Cook for an additional 2-3 minutes, allowing the sauce to thicken slightly.

Plate the Dish
Fluff the cooked rice with a fork and serve it on plates. Top with the stir-fried vegetables and sauce. Garnish with fresh cilantro and serve lime wedges on the side for squeezing over the dish.
