Rice Preparation

    Cook the Rice

    In a medium saucepan, combine 1 cup of gourmet rice with 2 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

    Prepare the Vegetables

    While the rice is cooking, wash and chop the red and yellow bell peppers, onion, mushrooms, and snow peas into bite-sized pieces.

    Stir Fry the Vegetables

    In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Once hot, add the chopped onion and sauté for about 2 minutes until translucent. Add the bell peppers, mushrooms, and snow peas, and stir fry for another 5-7 minutes until the vegetables are tender but still crunchy.

Sauce and Assembly

    Add Sauce

    In a small bowl, mix together the spicy Thai chili sauce and soy sauce. Pour the sauce over the stir-fried vegetables and toss to coat evenly. Cook for an additional 2-3 minutes until the sauce is heated through.

    Serve

    Fluff the cooked rice with a fork and serve it on plates. Top with the stir-fried vegetables and garnish with chopped cilantro. Serve with lime wedges on the side for an extra zing.
