Fried Chicken Preparation

    Marinate the Chicken

    In a bowl, combine the chicken breasts and buttermilk. Let marinate for at least 30 minutes, or ideally overnight in the refrigerator.

    Prepare the Dry Coating

    In a separate bowl, mix together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

    Coat the Chicken

    Remove the chicken from the buttermilk and allow excess to drip off. Dredge the chicken in the flour mixture until well coated.

    Fry the Chicken

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the chicken and fry until golden brown and cooked through, about 6-7 minutes per side. Drain on paper towels.

Bacon Jalapeño Jam Preparation

    Cook the Bacon

    In a skillet, cook the bacon until crispy. Remove bacon from the skillet and set aside, leaving the rendered fat.

    Sauté Jalapeños

    Add chopped jalapeños to the skillet with the bacon fat and sauté until softened, about 3-4 minutes.

    Make the Jam

    Crumble the cooked bacon and add it back to the skillet. Stir in brown sugar, apple cider vinegar, and salt. Cook until the mixture thickens, about 10-15 minutes. Remove from heat.

Hot Honey Glaze Preparation

    Combine Ingredients

    In a small saucepan, combine honey and hot sauce. Heat over low heat until warmed through, stirring to combine.

Assembly

    Assemble the Sandwich

    On the bottom half of each brioche bun, layer the fried chicken, a slice of Monterey Jack cheese, a spoonful of bacon jalapeño jam, and drizzle with hot honey glaze.

    Add Toppings

    Top with lettuce and pickles, then place the top half of the brioche bun on each sandwich.

    Serve immediately with kettle chips on the side.
