Method
Prepare the Weisenberger Mills Grits
Prepare the Lobster Dill Cream Sauce

Sauté Garlic
In a saucepan, melt 2 tbsp of butter over medium heat. Add 2 minced garlic cloves and sauté until fragrant, about 1 minute.

Add Cream and Season
Pour in 1 cup of heavy cream, add 1 tsp of salt and 1 tsp of black pepper. Bring to a gentle simmer.

Incorporate Lobster
Add 1 cup of chopped lobster meat and 2 tbsp of chopped fresh dill. Stir gently and simmer for 5-7 minutes until warm.
Cook the Citrus Cod

Season the Cod
Pat the 4 cod fillets dry with paper towels. Season both sides with 1 tsp of salt, 1 tsp of black pepper, 1 tsp of lemon zest, and 1 tsp of orange zest.

Sear the Cod
In a large skillet, heat 2 tbsp of olive oil over medium-high heat. Once hot, add the cod fillets and cook for 3-4 minutes on each side, until golden brown and cooked through.
Serve the Dish

Plate the Grits
Spoon the creamy grits onto each plate as a base.

Add Cod and Sauce
Place a cod fillet on top of the grits and drizzle generously with the lobster dill cream sauce.

Garnish
Top with halved cherry tomatoes and garnish with fresh dill sprigs.
